You can collect the small milk containers (school sized) and make gingerbread houses using sugar icing to hold it together and real candies and fruits for the decorations and windows. The icing makes for some great snow around the house too! When my son did this in school they secured it to a Styrofoam plate.
References :
If you have a Michael's Craft store near you they have TONS of stuff you can do with kids. I went there last year and at the time my step daughter was only 2, but she loved helping me glue things, color things, etc. They are rather inexpensive also.

You can never go wrong with buying a wooden ornament and have them paint it themselves.
References :
Wow, there are tons we have done. There are of course ornaments that you can do. We've done the foam kits that you find at crafts stores. Another year we did ornaments using seashells, just painting/decorating them and gluing ribbon so it could hang. My favorite thing is to do crafts as presents for the grandparents. One year we did a basket of homemade soaps, candles, and spa things for the grandmas. Also t-shirts and keychains for the papas.

I definitely recommend checking out your library for childrens crafts books, and the local craft store for kits and ideas. There is so much you can do.
References :
Mom of three
